Emily Matson 4/12/2019 12:18 PMThis winter I have really been enjoying making soups with Umi ramen noodles. Yes, they are technically processed food, but they are made in Portland with Oregon-sourced organic grains. Reading about the Umi company on their website, I stumbled on this article about wheat farming. Did you know that Portland is the largest export gate of wheat and barley in the nation? Super interesting article - and I bet you could even earn Live Greener Challenge points for reading it :)
